Thanks for providing information about Sabari Express which new piece of information for me.
Before RSA with Sri Jaganath Express, Reff to old TT, After 2841/2 Superfast Number, SER has 2859/60 superfast number which was having SER Rake so after RSA, Number was not changed, so it is SER Train number for Gitanjali from my point of view.

Where is the need of changing the number after RSA dear? 28XX series sf train number is used by both SER and ECOR, so 2859/60 number can also be a number of ECOR like 2801/02 for purushottam and 2815/16 for nandan kanan..

Gitanjali was always of SER. Operation SER Rake ECoR. That is why PC was of SER in ECoR rake.
