So I need to pay 720 in VB compared to 315 in shatabdi between Mysuru and Bengaluru. No way.

Whether people like it or not rush in Northern Trains would always outweight rush in Southern Trains.
Kanpur Shatabdi Express still running even after Shatabdi, Vande Bharat and Tejas among numerous Rajdhani Trains being on the same route is a testament to that.
Even for that matter, look at Delhi Ambala Cantt Section 😂, 2 Amritsar Shatadis, 2 Kalka Shatabdis, 1 Chandigarh Shatabdi, 2 Vande Bharat Trains alongside a Jan Shatabdi and numerous other trains. Still you'll have good occupancy numbers.

2 trains need to have a timing gap like Bhopal Shatabdi and Gatimaan Express to ensure unique occupancy numbers in this route. Different time slots would make it feasible for more people, or else resort to adding halts like KJM and Kengeri.

Whether people like it or not . In Southern states Public bus transportation connecting Inter states are outweigh than Northern states. Especially (Karnataka RTC, TNSTC, KSTRC, APSRTC). That also one reason where people have different options.

The reason for northern states depending on more on Railways is the length of rail line and roadways is the same between Delhi to respective state cities like Jaipur Ajmer, Chandigarh Ludhiana Amritsar,n Agra Kanpur Lucknow Allahabad. While in southern India the distance between metro cities or towns to state capitals are shorter by 50-100 km in some routes making road transport a better alternative for some residential and business parts of the 3 metros.
Second the truck traffic is very high in northern states that road network takes more time for personal vehicle as well as high end buses as in connecting southern metros. In southern states to metros it's easy to achieve an avg of 60-70kmph during night
