From POY to Nilambur only the journey is during day time, from 0645 hrs to 1100 hrs, right..? You can cater in the train, loading at stations.
The remaining journey, the PC is a pay load. Instead you could add a 3A or SL, which would deliver more income. Or you could have a 'PS1' too, just for serving break fast.
