All the trains are manufactured in specific standards. why cant the height of the railway platforms be increased equal to the floor of the train? This not only makes easier for boarding and de-boarding the train but also loading and un loading of goods from the luggage van also becomes easier.Example is Delhi metro train the floor of the train and level of platform are equal.

Delhi Metro has never had any issue related to different gauge, as in IR!!
Even then, IR has slowly addressed this big leap & most PF are of same height!!
But still, comparing Metro with IR, isnt genuine. Per KM Charge of Metro is quite-quite higher as when compared with IR!!

It will require a lot of modification & money. For Delhi Metro all the stations are upto the level of metro train. however in IR there are so many stations will nil, low, medium & high platforms. The train may stop at any stations of any height. So for the convenience of passengers as well as crew this is the practice.
In addition to what Vinay you mention, that IR is carrying forward the infrastructure from 1853 onwards. Metro was made in one go from 2000 (?) onwards
One more reason, but I am not sure about it's correctness .At good olden time the doors of the coaches were open out side only. There must be some space for safety of the passengers and article at the platform.
But the gap between coach and platform should be minimum and uniform, but it is not like that which create many loss for life.
