It shows they're not cooking anything and simply serving Base Kitchen Food.

Mumbai Rajdhani Trains 1A Food Served through Casseroles.
This is the exact reason why Rajdhani Trains of South India aren't held in high regard. The only Daily Rajdhani of South India is serving Base Kitchen Food to AC First Passengers. It's pathetic.
Even in the recent travel videos you'll see Bhubaneswar Rajdhani having fantastic 1A Food.
Kolkata Rajdhani Twins are already known for service, same goes for Captain Patna Rajdhani.
Some Zones aren't truly meant to handle Maintainence or Catering of Rajdhani Trains.
We can curse NR all we want, but NR actually maintains certain standard in it's Premium Services.
Here we are seeing different kind of serving for same class of coach in same class of train among different services. Pathetic.
