Will Railway always prefer Delhi Jaipur Ahemdabad route via Ringus after Gauge conversion instead of current Delhi Jaipur Ahemdabad route via Alwar?

There will definitely some trains that will be introduced via RGS JP instead of AWR JP
Truth is, currently the RE JP route is saturated due to shortage of platforms at Alwar Junction.
Time will only tell what will happen when Ringus Jaipur guage conversion will be complete
