Most trains do stop at Prayagraj except for few. Allahabad/Prayagraj is a big city and barring few trains, it has gotten it's fare share of trains. MTJ is technically the biggest junction in terms of numbers of tracks diverging in different directions. It has it's share of stopping trains and some trains do start/stop from here. I guess due to it's closeness to Agra, high profile trains skip it.
